Vegetable Lasagne

Method
- Pre-heat oven to 180°C / 160°C fan-forced.
- Bake the sliced zucchini, pumpkin and sweet potato until tender.
- Mix ricotta with egg and half of the Mozzarella.
- Layer lasagne sheets, vegetables, sauce, spinach, mushrooms and cheese mixture.
- Top with remaining Mozzarella and bake for 1 hour.
