Air Fryer Smashed Garlic & Herb Parmesan Potatoes

Method
- Boil, steam or microwave potatoes until fork tender. Drain well and transfer to a baking tray.
- Using the base of a tumbler or potato masher, press down on potatoes until just squashed but still holding together.
- Mix together olive oil and Parmesan and spoon over potatoes.
- Place in air fryer in a single layer and cook for 5 minutes at 200°C. Turnover and cook a further 5-8 minutes or until crisp and golden. Cook in batches as necessary. Sprinkled with extra Parmesan and chopped chives and serve immediately.
More Tips
- Cook times will vary between air fryers. Check manufacturer’s recommendations. Start checking food at the minimum cook time and adjust to suit your airfryer.
- If the air fryer basket is too small to cook the potatoes at one time, cook in batches of two. Transfer cooked potatoes to a bowl and keep warm under foil.
- Alternatively cook potatoes in a hot 200°C oven for 25-30 minutes
